BUTTERFLY PEA CORN PULAV 





INGREDIENTS:

BASMATHI RICE              - 1  cup
SWEET CORN                - 1 cup
BUTTERFLY PEA            - 20 flowers 
WATER                       - 2 cups
ONION                         - 1
GINGER & GARLIC paste   - 1/2 tsp
MINT                          - 10 leaf
KASURI METHI               - 1 pinch
LEMON                       - 1/4 tsp 
CINNAMON                   - 1 inch
CLOVE                       - 2
CARDAMON                  - 2
STAR FLOWER             - 2
PANDAN leaf                - 1
(or bay leaf) 
GHEE                         - 3 tbsp 
OIL                           - 5 tbsp
SALT                        - to taste 


# Boil the flowers in 2 cups of water & close it with a lid., keep aside.
# Soak the rice in water for 10 mits & drain it .
# In a pan add 1 tsp of ghee and add the rice & fry it well for 2 mits & keep aside (this helps to keep the rice thin & long).
# In a pan pour oil little ghee then pandan leaf, cinnamon, clove, cardamon & star flower,  fry them till you get a good aroma..  
# Now add the chopped onions, ginger garlic paste, fry till the raw smell leaves.
# Add inn chopped mint and kasuri methi and fry.
# Now add in raw corn kernels  & the rice.
# pour in 2 cups of strained flower water (could add normal water to adjust).
# Then add salt and 2 tbsp of ghee and let it boil.
# When it starts boiling add lemon extract (this keeps the rice non-sticky) and close the led and cook in low flame for 10 mits.
# Now serve hot with panner butter masala.

NOTE: 
* Could use dry or fresh flowers.
* Single or double layer flower can be used.
