 PONGAL ROTI

FROM LEFTOVER VENPONGAL










INGREDIENTS:

VENPONGAL  - 1 cup
(left over)
RICE FLOUR - 3/4 cup (approx.) 
ONION - 1
CARROT - 1
GREEN CHILLI - 2
CORIANDER leaf - little
SPRING ONION - little (optional)
SALT - little
OIL - 3 tbsp
WATER - very little

# Take the leftover venpongal in a wide bowl.
# Slice the onion in this side of the grater.Cut the onion into two and then grate it, so that onions will bind with the dough well.
# To the venpongal add inn the onion, finely grated carrot & chilli & finely chopped coriander leaf & spring onions and salt (remember pongal already has salt in it so just add a little).
# Now add in rice flour little by little and bind all together by sprinkling very little water to it.
# Mash it up well few times pour oil now and mash it up again.
# The consistency would be like a roti dought (refer pic).
# Use POORI PRESS & make roti's.
# Serve hot with PICKLE.

Will not waste VENPONGAL anymore..😉
