BLACK BEAN SALSA with NACHO khakhra


BLACK  BEAN SALSA 




INGREDIENTS:

BLACK BEAN        - 1 cup
SWEETCORN         - 1/2 cup
CAPSICUM           - 3 tbsp
ONION               - 1
TOMATO             - 1
(deseed)
CUCUMBER         - 1/4
ONION SPRINGS   - few
MINT               - few
LEMON extract    - 1/2 tsp
ALMOND          - 4
(optional)

for dressing:

OLIVE oil          - 1 tbsp
CHILLI POWDER  - 1/2 tsp
SALT               - to taste
GARAM masala    - 1/4 tsp
MIXED HERBS    - 1/4 tsp
SUGAR            - 1/4 tsp
CHILLI FLAKES  - little
(optional)

# Pressure cook bean with little salt & drain the water and keep it.
# In a wide bowl add in bean, corn (cooked), finely chopped onion, tomato (deseeding will keep the tomatoes dry), capsicum & cucumber.
# Mix up all the dressing ingredients together and pour into the veggie bowl & give a mix.
# Add in the lemon extract and give a mix.
# Finally sprinkle it with grated almonds & finely chopped onion springs.
# Serve with NACHOS or NACHO KHAKHRA.

NOTE: BLACK BEAN could be substituted with RED BEAN or PINTO BEAN.
