CHEESY SAUCY PASTA






INGREDIENTS:

 PASTA                          - 200 gms
 (spiral / penne)
 SWEETCORN                   - 1/4 cup
 ONION                         - 1 
 CAPSICUM                     - 1/2 pc
 GARLIC                        - 3 cloves
 MILK                          - 1/2 ltr
 BUTTER                       - 3 tbsp
 MAIDA                        - 3 tbsp
 MIXED HERBS               - 1/4 tsp
 BASIL (fresh)                - 5 leaf (optional)
 ROSEMARRY(fresh)          - 1 strand (optional)
 SALT                          - to taste
 ( use half salt as cheese contains salt)
 CHILLI FLAKES              - 1 tsp
 CHILLI POWDER             - 1/4 tsp
 MOZZARELLA CHEESE      - 200 gms
 ONION SPRINGS             - little

# Cook pasta and keep it aside (make sure pasta does not get over cooked).
# In a hot pan add 1/2 tbsp. of butter and let it melt.
# Add in finely chopped onion and sauté quickly once, immediately add in finely chopped capsicum and sauté it just once (don't sauté more than two seconds).
# Next add in cooked corn and sauté once and remove the veggies & keep aside.
# In the same pan add in the remining butter, then grated garlic. Fry till the raw smell leaves (make sure not to burn the garlic).
# Now add in the maida and mix it up well it would become like a paste.
# Now add in milk (raw also fine) little by little and keep stirring continuously without forming lumps.
# After pouring milk add in finely chopped fresh herbs (optional) and let the milk boil until it becomes thick like sauce.
# Keep stirring then & there to avoid getting burnt in pan's bottom.
# Now into the white sauce add in the fried veggies, mixed herbs, salt, chilli power & flakes.
# Let it cook for few mits & add cooked pasta and let it cook for 3 mits.
# Finally add in onion springs & grated cheese (reserve little to garnish while serving) and put of the flame. 
# Serve hot by garnishing little cheese on it.

NOTE:
    * Pour little water into the cooked pasta bowl so that the pasta will get separated from each other.
     * Do this process only before adding pasta to the sauce.
