SPICY BHAJI PULAV






INGREDIENTS :

BASMATHI rice       - 1 cup
ONION                - 1
TOMATO              - 2
CAPSICUM            - 1/2
POTATO               - 1
GREEN PEAS         - little
(optional)
SPRING ONION       - few 
(optional)
G & G paste          - 1/4 tsp
(ginger & garlic paste)
CORIANDER leaf     - handful
BUTTER              - 5 tbsp
OIL                   - 1 tbsp
GHEE                - 1/2 tsp
PAV BHAJI masala  - 2 tbsp
SALT                 - to taste
LEMON              - 1/4 tsp
WATER              - 2 cups

# Soak basmathi rice for 10 mits, later drain water.
# Take a pan let it heat, pour the ghee to it add in the soaked & drained rice, fry it for 2 mits. The rice becomes stiff & shiny.
# Transfer the rice to a bowl, add in 2 cups of water & little salt close the lid & let it cook for 4 whistle.
# Also pressure cook finely chopped potato & green peas (could cook along with the rice).
# After the rice is cooked spread it in a wide plate and let it become cool (this step prevents the rice from breaking & sticking to each other).
# In a pan add in the butter & oil let it melt then add in finely chopped onion fry it till it becomes translucent.
# Add in g & g paste fry till it raw smell leaves.
# Add in finely chopped capsicum, then tomatoes finely chopped. 
# Once the tomatoes are very well cooked add in little coriander leaf, pav bhaji masala & salt.
# Sprinkle very little water ( just to moist the veggies), then add cooked peas, potato & rice.
# Give them a cook mix, close it wit a lid and leave it in low flame for 3 mits.
# Put off the flame and add in lemon extract and mix it .
# Finally sprinkle finely chopped onion springs.
# Serve hot with ONION RATIA.
