BARLEY SALAD
BARLEY SALAD
INGREDIENTS:
BARLEY - 1 cup
WATER - 3 cups
TOMATO - 2
CAPSICUM - 1/4 cup
CUCUMBER - little
LETTUCE - 3 leaf
CELERY - 2 stem
ONION springs - few
PARSLEY - little
SALT - to taste
PEPPER powder - to taste
MIXED HERBS - little
LEMON extract - to taste
OLIVE oil - 2 tbsp
# Pressure cook barley with water & little salt for 6 whistle (don't over cook it).
# Strain the barley and let it cool completely.
# Finely chop all the veggies & keep aside.
# Take a bowl add in cooled barley & other veggies & give it a gentle mix.
# Now sprinkle up salt, mixed herbs, pepper powder, lemon & oil.
# Serve it up with DORITOS.
NOTE:
* Make BARLEY SOUP (for recipe CLICK HERE) with the strained barley water.
* PARSLEY can be substituted with coriander leaf.
* Use SUNFLOWER oil instead of olive oil.
* Here I have used garden fresh salad tomatoes.
