BURNT RAW MANGO RASAM

(KILIMOOKU MANGA)







INGREDIENTS:

RAW MANGO                - 1
(KILIMOOKU MANGA) 
PEPPER                     - 4 balls
JEERA                      - 1/2 tsp
GREEN CHILLI             - 3
CORIANDER SEEDS        - 2 tsp
TUREMRIC POWDER       - 1/4 tsp
ASAFOETIDA               - 1/4 tsp
SALT                       - to taste
JAGGERY                  - 1/4 tsp
WATER                     - 3 cups
CORIANDER LEAF         - little

TEMPERING               - OIL, MUSTARD, RED CHILLI -2 & CURRY LEAF


* Burn the raw mango well for 3 to 5 mits.
* Rotate the mango all the sides while burning.
* Water oozes out like a steam from mango when its almost cooked.
* Burn the mango for 2 more minuets once it starts to ooze out.
* Let the mango cool down completely & then peel out the skin with the help of a knife.
* Remove the pulp of the mango in a mixer jar & pulse it twice to roughly grind it (do not make it as fine paste) & keep aside.
* In the same way burn the green chilies also for 2 minuites (stay safe as the seeds may pop).
* Now finely grind pepper, jeera, coriander, green chili(burnt), turmeric powder, jaggery, asafoetida & salt in a mixie.
* In a bowl mix water, mango pulp & grounded powder & keep aside.
* In a pan after tempering, pour the above water mixture & boil well.
* Put off the fire & garnish it with coriander leaf, serve hot with rice.
