ILLAI PIRANDAI PICKLE
INGREDIENTS:
ILLAI PIRANDAI - 2 handful
GINGELLY OIL - 100ml
GARLIC - 10
MUSTARD - 1 tsp
FENUGREEK - 6 (crush it)
ASAFOETIDA - 1/2 tsp
CHILLI POWDER - 1 tsp
SALT - to taste
TAMARIND - big lemon size (grind it to paste)
GAGGERY - 100 gms
* Chop the illai pirandai & keep it separately.
* In a kadai pour 50 ml of oil & let it heat.
* To it add garlic and fry till the colour turns brown.
* Now add the leaf and fry till the color turns pale.
* Just remove the garlic & leaf without oil & let it cool.
* Grind it to a fine paste.
* Heat the left over oil again and add mustard seeds & let it splutter.
* Then add in the crushed fenugreek, asafoetida & the grounded paste and give a good mix.
* Add in chilli powder, salt, tamarind paste & jaggery and mix it well.
* Pour little more oil and cook till the oil get separated.
* Adjust chilli powder according to the spice you prefer.
* Pour the remaining oil and let it boil for 2 mits.
* Let it cool & transfer it to a glass bottle.
* Could be stored outside for a month.
* Serve it with idli, dosa, curd rice, muruku & tattu vadai.
NOTE:
THIS PICKLE COULD BE MADE WITH ANY TYPE OF PIRANDAI.
NEED NOT REMOVE ANY FIBER FROM ILLAI PIRANDAI, IT CAN BE USED DIRECTLY.
